We’re proud to present yet another stunning coffee from one of our favourite Colombian producers — Elkin Guzman’s Finca El Mirador.
Elkin is one of the most inventive minds in Huila. We’ve featured his coffees on Brew Methods before, and we’ve been enjoying his work for years. Finca El Mirador — a 70-year family farm passed down from his mother, Fanny Vargas — is where his ideas take shape.
After studying agricultural engineering at Cauca University, Elkin returned home with a research-led approach to processing. A presentation by Brazilian agro-engineer Dr. Flávio Borém sparked a wave of experimentation that led to one of his most unusual success stories: the Natural-Hydro-Honey process.
It’s unconventional on purpose. Cherries are picked at peak ripeness, dried as a Natural, rehydrated, then depulped and finished as a Honey. The result is a cup that carries the fruit weight and depth of a Natural, paired with the clarity and structure of a Honey — a beautiful match for Tabi.
Just as important as the coffee is Elkin’s commitment to his community. He shares knowledge openly, encourages producers to see themselves as specialists, and champions a future where innovation, quality, and generational stewardship are at the heart of Colombian coffee.
This microlot brings all of that together — science, curiosity, and a whole lot of flavour in one remarkable brew.
