Fazenda Cachoeira sits within Brazil's Cerrado Mineiro - the country's first protected designation of origin for coffee. At elevations between 1,045 and 1,100 metres, defined seasons and controlled drying conditions support the kind of uniform maturation that specialty coffee demands. A family-owned estate built across generations, the farm cultivates red and yellow Catuaí using natural and controlled fermentation methods that honour the region's terroir rather than work against it. In 2021, a natural yellow Catuaí lot scored above 90.5 at the Brazil Cup of Excellence Championship, a result that reflects not just a single harvest, but decades of disciplined reinvestment, environmental stewardship, and an unwavering commitment to quality at origin.
Exceptional as a filter coffee — try it as a V60 or Aeropress to highlight its red apple sweetness, juicy peach-like body, and soft orange blossom aromatics. The cup’s clarity and balance also make it a great espresso, with creamy sweetness and a vibrant peach finish.
